The Role

n

Reporting to the Group General Manager, you will oversee all aspects of venue operations, leading large teams across FOH, BOH, bar, and entertainment to deliver seamless, high-volume service and an immersive guest experience. This is a hands-on leadership role in a fast-paced, high-profile, environment.

Key Responsibilities

Operations & Service

n

- Oversee daily operations across all departments
n
- Ensure smooth, high-volume service during peak periods and events
n
- Maintain venue readiness, procedures, and compliance
n

n

Leadership & Team

n

n
- Recruit, train, and lead a large, diverse team
n
- Manage rostering, performance, and team development
n
- Lead from the floor during busy service
n

n

Guest Experience & Brand

n

n
- Deliver a consistent, immersive themed experience
n
- Manage VIPs, media, and high-profile guests
n
- Resolve issues quickly while protecting brand reputation
n

n

Financial Performance

n

n
- Manage budgets, P&L;, labour, and cost controls
n
- Drive revenue through events, promotions, and upselling
n
- Monitor KPIs including sales, turnover, and guest satisfaction
n

n





Events & Entertainment

n

n
- Coordinate themed events and entertainment
n
- Work with performers and production teams to deliver seamless experiences
n

n

Stock, Safety & Compliance

n

n
- Oversee inventory, ordering, and supplier relationships
n
- Maintain food safety, licensing, and venue compliance
n
- Manage incidents and ensure safe operations
n

n

About You

n

n
- Proven leadership in high-volume, fast-paced venues
n
- Experience managing large teams (40+ staff)
n
- Strong operational, financial, and organisational skills
n
- Confident communicator with a hands-on leadership style
n
- Passion for hospitality and delivering exceptional guest experiences
n
- Ability to perform under pressure in a dynamic environment
n

Requirements

n

n
- Minimum 5 years' restaurant/venue management experience
n
- Solid background in high-volume, full table service
n
- Current RSA & RMLV
n
- Solid financial acumen (P&L;, labour, stock control)
n

n

Highly Desirable

n

n
- Experience in themed or entertainment-driven venues
n
- Events, launches, or media experience
n
- First Aid / Training qualifications
n
- Hospitality or Hotel Management diploma
n
