HMS Management Pty Ltd is looking for a

Head Chef – Gold Coast – Clock Hotel

Salary Range $110,000 to $115,000 for the right applicant

Our busy kitchen requires a full time talented & experienced Head chef for our 7 day kitchen operations for our hotel group.

The Position & Duties:

· Ensure smooth day-to-day operations of the kitchen

· Be responsible for designing and update menus, setting portion sizes, and guiding chefs and cooks by demonstrating techniques and advising on cooking methods

· Be responsible for setting food and labour costs

· Oversee purchase and maintenance of kitchen equipment

· Ensure optimal the inventory and stock control

· Inspect food supplies to ensure freshness and quality

· Ensure excellent standards of food presentation is maintained

· Ensure compliance with all food storage and hygiene and cleanliness standards

· Be responsible for recruitment and training of chefs and kitchen staff

· Foster open communication within the kitchen team to maintain a positive and efficient work environment.

· Coordinate with the front-of-house staff to ensure smooth service and timely food delivery.





Qualifications & Skills:

· lead a team of up to 6 chefs / cooks & kitchen hands

· Minimum 3-5 years as a head chef in a high volume bistro

· Minimum 2 years in a steak house restaurant environment

· Excellent and calm communicator

· Staff management

· Enjoys working with other professionals

· Enjoys training & developing new staff

· Experienced in cocktail functions

· Experienced in ordering & stock taking

About You:

· Chef trade qualifications with at least 3 years of senior culinary experience

· High volume dining experience is an advantage

· Strong leadership, organizational, and communication skills

· Budget management experience

· Stock-take proficiency

· Food Safety – Supervisory certificate
