Hamilton Island Enterprises’ Catseye Pool Club in Sydney CBD seeks an experienced Sous Chef to join the kitchen leadership, overseeing daily service in a high-end seafood‑focused setting and upholding the restaurant’s sustainability standards.

Reporting to the Head Chef, you’ll mentor the brigade, manage sections, assist with rostering and stock control, and contribute to menu refinement and daily specials while maintaining quality under pressure.
