About Us

67 Pall Mall is a private members’ club for wine lovers, with clubs in London, Singapore and Verbier. Our Club in Melbourne, located at 85 Spring Street, will bring exceptional wine, food and hospitality to the heart of the city.

With the club’s opening currently projected for 2027, we are building a team of casual sommeliers to support our pre-opening member events, tastings and celebrations.

About the Role

We are looking for experienced, knowledgeable and passionate sommeliers who can deliver outstanding wine service in a premium event setting.

You will introduce and serve wines, share your knowledge with members and guests, and help create memorable experiences that reflect the standards of 67 Pall Mall.

These are casual opportunities, with shifts offered according to our event calendar. There may be opportunities to transition into full-time roles when the club opens, subject to business needs and a separate recruitment process.

What You’ll Bring
- A minimum of WSET Level 2.
- Previous sommelier experience in premium hospitality, such as fine dining restaurants, luxury hotels or private members’ clubs.
- Robust practical wine knowledge and a genuine passion for wine, hospitality and continued learning.
- A valid Victorian RSA.
- Availability for event shifts, including evenings and weekends.

Your Wine Service Skills You will be confident in:
- Opening and serving still and sparkling wines professionally.
- Assessing wine condition and identifying common faults, including cork taint.
- Pouring accurately and consistently.
- Communicating producers, vintages, cuvées, regions and wine styles clearly.
- Engaging guests with approachable, informed wine recommendations.
- Maintaining polished service while working calmly and collaboratively in a busy event environment.
