SWAAD ON HUME PTY LTD SWAAD ON HUME PTY LTD, trading as Rasam Indian Restaurant, is a growing Indian restaurant located in Craigieburn, Victoria. We specialise in authentic North Indian cuisine, offering traditional dishes prepared with quality ingredients, aromatic spices and established Indian cooking techniques. We are seeking an experienced and enthusiastic Cook with strong knowledge of Indian cuisine and traditional spices to join our kitchen team on a full-time basis.

Benefits Competitive annual salary of $80,000–$85,000, depending on skills, qualifications and relevant experience. Full time employment with 38 hours per week. Superannuation paid in addition to base salary in accordance with Australian law.

responsibilities The successful applicant will be responsible for: Preparing and cooking a variety of traditional North Indian dishes, including vegetarian and non-vegetarian curries, lentil preparations, rice dishes and tandoori specialities. Checking the freshness, condition and suitability of vegetables, meats, dairy products and other ingredients before food preparation. Preparing ingredients through cutting, chopping, grinding, mixing and marinating using appropriate Indian cooking techniques.

Selecting and blending traditional Indian spices,



herbs and seasonings to produce consistent flavours across the restaurant's dishes. Using and adjusting gas cooktops, tandoors, ovens and grills to achieve appropriate cooking temperatures for different food items. Monitoring food during cooking to ensure appropriate texture, consistency, taste and presentation.

Preparing Indian gravies, sauces, marinades and accompaniments in accordance with the restaurant's established recipes. Portioning and presenting cooked dishes with suitable garnishes, sauces and accompaniments before service. Preparing meals to accommodate customers' dietary requirements and preferences, including vegetarian options and varying spice levels.

Handling and storing raw ingredients and prepared food at appropriate temperatures to maintain food safety and freshness. Maintaining cleanliness of cooking equipment, utensils, food preparation surfaces and kitchen workstations. Checking ingredient availability and assisting with food preparation quantities to support daily restaurant operations and minimise wastage.

Coordinating with other kitchen team members to ensure timely preparation and cooking of customer orders during service periods.



Qualification & experience To be considered for this position, applicants must have: Certificate IV in Commercial cookery or an equivalent recognised qualification.

Minimum 1 year of relevant professional cooking experience, preferably in an Indian restaurant. Demonstrated experience preparing authentic Indian dishes in a commercial kitchen. Sound knowledge of traditional Indian spices, herbs, spice combinations, marinades and cooking methods.

Practical experience preparing Indian curries, gravies, rice dishes and tandoori food. Good understanding of commercial kitchen hygiene, food handling and workplace safety requirements. Ability to maintain consistent food quality while working efficiently during busy service periods.
