About Moretti
Moretti is an Italian restaurant offering dine-in, takeaway and home delivery services. As customer demand for convenient takeaway and home delivery grows, we are investing in the development of this part of our business.
We are seeking an experienced Retail Manager with food and beverage experience to lead our takeaway, delivery and food retail operations. This position will have responsibility for day-to-day operations, staff supervision, sales performance, stock control and customer service across these sales channels.
About the role
You will manage the customer-facing takeaway and retail operation, including orders placed directly with Moretti and through third-party delivery platforms such as Uber Eats.
Working closely with the kitchen team and venue management, you will ensure orders are processed accurately, prepared within agreed timeframes and dispatched efficiently. You will also manage staffing, operating costs and service standards, and identify opportunities to improve sales and profitability.
Key responsibilities
- Plan, organise and manage daily takeaway, home delivery and food retail operations.
- Establish operating procedures for receiving, processing, checking, packaging and dispatching orders.
- Manage online ordering and delivery platforms, including product availability, menu listings, pricing updates authorised by management and trading hours.
- Coordinate with the kitchen team to manage order volumes, preparation times and stock availability during peak service periods.
- Supervise takeaway and retail staff, allocate duties and prepare rosters within approved staffing budgets.
- Assist with recruitment and selection of staff, provide induction and training, and monitor staff performance.
- Set and monitor customer service standards, including order accuracy, presentation, collection times and delivery handovers.
- Resolve customer complaints, missing or incorrect orders and refund requests within company policies.
- Monitor sales, platform commissions, packaging costs, labour costs and wastage, and report on the profitability of takeaway and delivery operations.
- Prepare operating budgets and sales forecasts for the takeaway and retail business unit, in consultation with management.
- Monitor stock levels of retail products, beverages, packaging and service supplies, arrange purchasing and maintain stock records.
- Liaise with suppliers regarding product quality, availability, pricing and delivery schedules.
- Implement stock rotation, storage and stocktake procedures to minimise shortages, spoilage and waste.
- Recommend product selections, takeaway offers and promotional activities based on customer demand and sales performance.
- Oversee point-of-sale procedures, sales records, cash reconciliation and delivery platform payment reconciliation.
- Maintain food safety, hygiene, allergen communication and workplace health and safety procedures within the area of responsibility.
- Ensure takeaway packaging and order handovers support product quality and safe food handling.
- Provide regular reports to management on sales results, staffing, customer feedback and operational improvements.
Qualifications and experience
We are looking for applicants who have:
- At least two years of experience managing a food retail, takeaway, quick-service or comparable food and beverage operation.
- Demonstrated experience supervising staff, preparing rosters and managing daily operational priorities.
- Experience with online ordering systems, third-party delivery platforms and point-of-sale systems.
- Strong communication, organisational and customer service skills.
- The ability to manage a busy service environment and coordinate effectively with kitchen and management teams.
- Availability to work rostered evenings, weekends and public holidays.
Relevant food safety certification will be highly regarded. Any certification legally required for the duties must be held or obtained before undertaking those duties.
