About the role

We are seeking an experienced Senior Commis de Partie (CDP) to join our kitchen team at The Lancefield Hotel on a full-time basis. This is a key position within our culinary operation, based in Lancefield, VIC 3435. As Senior CDP, you will play a crucial role in supporting our senior kitchen staff in the daily execution of our menu, whilst taking on increased responsibility for station management, quality control, and the development of junior kitchen staff. Your expertise and leadership will be integral to maintaining the high standards of food preparation and presentation that define our establishment.

Key responsibilities

- Oversee and manage assigned stations, ensuring consistent preparation and presentation of dishes to the required standard

- Support the Head Chef in menu planning, development, and execution of daily services

- Prepare and cook dishes in accordance with established recipes and plating specifications

- Maintain exceptional standards of food hygiene, safety, and cleanliness across your station and the wider kitchen

- Mentor and supervise junior kitchen staff, providing guidance and constructive feedback to enhance their skills

- Receive and store deliveries, maintaining accurate inventory records and quality control of ingredients

- Manage portion control and food costs across your area of responsibility

- Collaborate with the kitchen team to ensure smooth and efficient service during peak periods





- Contribute to a positive and professional kitchen culture that prioritises teamwork and continuous improvement

What we're looking for

- Proven experience working as a Commis de Partie or in a similar senior kitchen position within a busy hospitality environment

- Strong culinary skills with the ability to prepare a diverse range of dishes to a high standard

- In-depth knowledge of food safety, hygiene practices, and the ability to maintain HACCP standards

- Demonstrated ability to lead and mentor junior kitchen staff, fostering a positive and supportive working environment

- Excellent organisational skills with the ability to manage multiple tasks efficiently during service

- A passion for culinary excellence and commitment to continuous professional development

- Strong communication and interpersonal skills with the ability to work collaboratively within a team

- Flexibility and adaptability to respond to changing service demands

- Current Food Safety Supervisor or similar certification is highly desirable

- Experience in a hotel or restaurant kitchen environment is preferred
