The FB 2IC works with the FB Manager to manage all aspects of providing exceptional Food & Beverage experiences to the family and guests. The FB 2IC is responsible for all service and dining areas, including all resources that aid in producing quality experiences and quality outcomes in the food and beverage department. The FB 2IC will be responsible for training staff to the highest standards and to ensure that the standards of service are always met.
EXPERIENCE & QUALIFICATIONS
Certification from a recognised Butler School
Level 3 - Food Hygiene & Safety (Supervisors)
Level 2 – Allergy Awareness
Level 2 – HACCP
Safe Chemical Handling
Diploma or higher education in Hotel Management, Hospitality Management, Business Management or Psychology
2+ years’ experience working as a butler at a senior level in a 5* establishment.
Experienced in working with VVIP clients with a passion for providing personalised luxury service

Advanced food /culinary knowledge – able to understand and explain menus and dishes, and prepare the dining area accordingly.
Knowledge in beverages – coffees, teas, juices, mocktails
Advanced pantry management knowledge.
Capable of building and maintaining inventories.
Outstanding attention to detail and creativity
Exceptional organizing skills
Exceptional teamwork, communication and collaboration skills
Leadership capabilities – able to motivate, lead and upskill a team.
In depth knowledge of sanitation principles, cleanliness and hygiene
Adheres to and ensures team adheres to food safety policies, procedures and practices.
Advanced MS office skills – word, excel, outlook, ppt.
Report writing.
