Royal Oak in Fitzroy North is looking for a Dining Room Manager to take ownership of our 60-seat dining room and help lead the next stage of its development.
We're looking for someone who loves restaurants, pubs and the people who make them what they are.
Someone who understands the detail of great service, knows how to run a busy floor and can create an atmosphere that feels polished without ever feeling stiff.
This is a hands‐on role.
You'll be on the floor, leading service, developing the team, getting to know our regulars and working closely with the kitchen and wider management team.
Royal Oak continues to evolve, and there is genuine room for this position to grow alongside the venue.
You won't be doing it alone.
You'll be supported by a hands‐on Venue Manager, Assistant Venue Managers, Senior FOH Manager, Head Chef and wider group management team who are invested in making the pub better.
The Role
At its heart, this role is about running a great dining room.
You'll take ownership of the floor during service, setting the tone for the team and making sure our guests receive warm, confident and thoughtful hospitality.
Your responsibilities will include:
Leading lunch and dinner services across our 60-seat dining room
Being present on the floor and setting the standard for service
Managing sections, reservations, seating, pacing and table turns
Working closely with the Head Chef and kitchen team to keep service flowing
Leading daily briefings and making sure the team understands the service ahead
Training, coaching and developing our FOH team
Building relationships with our regulars and local community
Handling guest feedback and service recovery with confidence
Overseeing larger bookings, celebrations and functions
Working with the wider management team on staffing and service planning
Maintaining strong standards around presentation, product knowledge and professionalism
Supporting the continued development of the Royal Oak dining room
We care about the details, but we don't want hospitality to feel scripted.
We want a dining room with personality, warmth and people who genuinely enjoy looking after others.
About You
You're likely already working in a strong restaurant, pub or wine‐led venue and looking for an opportunity where you can have more ownership.
You'll ideally bring:
At least 3 years' experience in a busy, quality-focused hospitality venue
Experience leading a restaurant or dining room floor
Strong food, wine and beverage knowledge
A genuine interest in restaurants, pubs and hospitality
Confidence leading and developing a team
The ability to stay calm and make good decisions during a busy service
Strong communication and organisational skills
Current Victorian RSA
WSET Level 2 or equivalent wine knowledge is highly regarded
Experience with OpenTable and OrderMate is advantageous
Availability across evenings and weekends
More than anything, we're looking for someone with good instincts.
Someone who notices when a table needs attention, when the kitchen needs another minute,
when a team member needs direction and when a regular walks through the door.
