Royal Oak in Fitzroy North is looking for a Dining Room Manager to take ownership of our 60-seat dining room and help lead the next stage of its development.We're looking for someone who loves restaurants, pubs and the people who make them what they are.
Someone who understands the detail of great service, knows how to run a busy floor and can create an atmosphere that feels polished without ever feeling stiff.This is a hands-on role.
You'll be on the floor, leading service, developing the team, getting to know our regulars and working closely with the kitchen and wider management team.Royal Oak continues to evolve, and there is genuine room for this position to grow alongside the venue.You won't be doing it alone.
You'll be supported by a hands-on Venue Manager, Assistant Venue Managers, Senior FOH Manager, Head Chef and wider group management team who are invested in making the pub better.The RoleAt its heart, this role is about running a great dining room.You'll take ownership of the floor during service, setting the tone for the team and making sure our guests receive warm, confident and thoughtful hospitality.Your responsibilities will include:Leading lunch and dinner services across our 60-seat dining roomBeing present on the floor and setting the standard for serviceManaging sections, reservations, seating, pacing and table turnsWorking closely with the Head Chef and kitchen team to keep service flowingLeading daily briefings and making sure the team understands the service aheadTraining, coaching and developing our FOH teamBuilding relationships with our regulars and local communityHandling guest feedback and service recovery with confidenceOverseeing larger bookings,
celebrations and functionsWorking with the wider management team on staffing and service planningMaintaining strong standards around presentation, product knowledge and professionalismSupporting the continued development of the Royal Oak dining roomWe care about the details, but we don't want hospitality to feel scripted.
We want a dining room with personality, warmth and people who genuinely enjoy looking after others.About YouYou're likely already working in a strong restaurant, pub or wine-led venue and looking for an chance where you can have more ownership.You'll ideally bring:At least 3 years' experience in a busy, quality‐focused hospitality venueExperience leading a restaurant or dining room floorStrong food, wine and beverage knowledgeA genuine interest in restaurants, pubs and hospitalityConfidence leading and developing a teamThe ability to stay calm and make good decisions during a busy serviceStrong communication and organisational skillsCurrent Victorian RSAWSET Level 2 or equivalent wine knowledge is highly regardedExperience with OpenTable and OrderMate is advantageousAvailability across evenings and weekendsMore than anything, we're looking for someone with good instincts.
