Assistant Manager – Ito Sydney

Ito, part of the renowned ESCA Group, is a 1-Hatted restaurant in Sydney celebrated for its modern Japanese cuisine with an Italian influence. Blending precision, artistry, and warmth, Ito offers a truly unique dining experience. We are now seeking an experienced Assistant Manager to join our leadership team and help deliver the exceptional hospitality that Ito is known for.

About the Role

As Assistant Manager at Ito, you will:

- Support in overseeing daily operations
- Lead, mentor, and inspire the FOH team during service
- Maintain the highest standards of service, presentation, and guest experience
- Work closely with the kitchen to ensure seamless execution of our Japanese–Italian concept
- Uphold Ito’s reputation as a leading 1-Hatted dining destination

What We’re Looking For

- Proven experience as an Assistant Manager or senior FOH leader in fine dining or high-end hospitality
- Strong leadership, organisation, and communication skills
- Confidence in food and beverage knowledge,



ideally with exposure to Japanese cuisine and/or Italian wines.
- Ability to thrive in a precise, fast-paced service workplace
- A genuine passion for hospitality and team development
