We’re looking for an experienced Catering Manager to join our Mosaic Hotel & SANFL High Performance Centre team — someone who can build and grow our catering offering, lead exceptional food experiences and ensure every function and event is delivered to the highest standard.

About the Chance

This is more than a catering management role — it’s an opportunity to establish and grow a new catering offering across the Mosaic Hotel and SANFL High Performance Centre at the Footy Park Precinct.

With new function and meeting spaces supporting corporate meetings, conferences, training programs, sporting events, community functions, private celebrations and special occasions, you’ll play a key role in shaping the food and hospitality experience across the precinct.

Reporting to the Head Chef, Mosaic Hotel, this role is ideal for an experienced functions / catering chef (preferably Sous Level) who can lead the catering and functions kitchen team, oversee functions menu development, and take ownership of catering delivery from planning through to execution.

You’ll combine your culinary expertise with robust commercial acumen to deliver outstanding food, exceptional service and profitable catering operations — while building relationships with clients, suppliers and internal stakeholders.





This role forms a key part of the Kitchen Leadership Team and will also support Mosaic Hotel Kitchen operations.

What You’ll Be Doing

- Plan and deliver standout catering for corporate, sporting, community and private events across Mosaic Hotel and the SANFL High Performance Centre
- Service sit-down alternate drop functions of up to 125 guests
- Create contemporary, commercially viable menus for diverse event formats
- Lead, coach and roster kitchen, catering and casual event teams
- Oversee food preparation, presentation and service, including dietary and client requirements
- Streamline catering orders, function bookings, and event delivery to ensure profitability, quality food, and outstanding customer experiences.

What You’ll Bring

- Trade qualification as a Chef with demonstrated experience in catering, hospitality, hotel, conference or events environments greater than 100 pax.
- Strong culinary skills and a genuine passion for quality food and presentation
- Proven leadership experience across kitchen, catering and event teams
- Solid understanding of food cost management, menu development and kitchen operations
- Excellent planning and organisational skills, with the ability to manage multiple events and priorities




- Highly developed customer service and communication skills
- A hands-on, proactive approach and the ability to lead by example
- A commitment to food safety, compliance and operational excellence
- Flexibility to work evenings and weekends across a 7 day roster in line with event requirements
- Current Food Safety Supervisor accreditation, or the ability to obtain
- Hold or able to obtain a DHS Working with Children Check
