About us

Cézan Trattoria & Bar sits within Krinklewood Estate, a certified organic and biodynamic vineyard in the Hunter Valley. Our estate brings together cellar door tastings, dining, accommodation, weddings and private events in a beautiful Provençal-inspired setting.

We’re looking for a confident, organised Food & Beverage Supervisor to lead our service team and oversee food and beverage operations across the estate.

About the role

This is a hands-on position combining floor leadership, guest hosting, staff supervision, stock management and administration. You’ll oversee service across Cézan, the Cellar Door, catering, weddings and events.

You’ll be the person keeping service moving, supporting the team and making sure everything is prepared—from reservations and rosters to bar stock and wedding orders. Working closely with our Owners, chefs and Wedding Coordinator, you’ll help deliver a consistent guest experience across a varied hospitality operation.

Usual Service Duties

Typical shifts: 9am–5pm, extending to 6pm on Saturdays

- Complete opening checks and prepare dining areas, tasting spaces, the bar and POS systems for service.

- Act as the primary host, welcoming and seating guests and managing reservations, group bookings and guest flow.

- Lead daily team briefings, allocate roles and support staff throughout service.

- Coordinate with the kitchen on service timing, dietary requirements and guest requests.

- Deliver and oversee food, beverage and wine tasting service.

- Drive wine sales and Wine Club memberships through tastings, recommendations and guest engagement.

- Handle guest feedback and resolve service issues promptly and professionally.

- Monitor inventory and complete weekly stocktakes across drinks, ingredients, packaging, glassware, cleaning products and other restaurant supplies.

- Coordinate ordering with the kitchen and suppliers, checking existing stock and upcoming bookings to maintain appropriate quantities and minimise waste.

- Keep venues clean, stocked and well-presented, completing checklists, closing procedures and preparing spaces for the next service.

- Organise staffing requirements and rosters at least 4 weeks in advance. Recruit casual staff when required.





Wedding & Event Duties

Typical wedding shifts: 12pm–9pm

- Work with the Wedding Coordinator to confirm staffing and service requirements and place orders two weeks before each wedding , covering drinks, ingredients, packaging and service supplies.

- Check existing inventory before ordering and ensure deliveries are received, checked and ready for the event.

- Review the run sheet, final guest numbers, dietary requirements, menu and beverage package before service.

- Brief the team on timings, responsibilities, table allocations and special requests.

- Oversee food and beverage setup, including tables, furniture, glassware, bar stock, ice, water stations and service equipment.

- Assist with furniture movement, styling and resetting spaces as required.

- Coordinate with the wedding planner and kitchen to keep food and beverage service aligned with the run sheet.

- Lead bar and floor service, managing staffing and guest flow throughout the event.

- Monitor beverage stock, communicate substitutions or additional requirements and maintain responsible service of alcohol.

- Respond to guest requests and resolve service issues calmly, escalating matters where required.

- Maintain presentation and cleanliness throughout service, including clearing glassware and resetting service areas.

- Coordinate pack-down and checklists within the shift and provide a clear handover to any remaining team, including outstanding tasks and stock updates.

Administration & Team Coordination

- Prepare staff rosters four weeks in advance, aligned with dining reservations, weddings and events.

- Manage phone, email and social media enquiries for Krinklewood and Cézan, responding promptly and converting enquiries into bookings.

- Oversee booking and POS systems, including OpenTable, Tock, Square and Shopify.

- Maintain accurate reservations, guest information and booking records.

- Coordinate menus, supplies and operational requirements with the kitchen and estate teams.





- Contribute to weekly sales and operational reporting.

- Maintain service procedures and checklists, and coach staff in hospitality, wine knowledge and service standards.

Sales & Business Growth

- Promote Krinklewood wines, dining and estate experiences across guest interactions.

- Support wedding and event enquiries when catering questions are provided.

- Help develop opportunities for corporate functions, retreats, group bookings, Christmas parties and seasonal events.

- Build relationships with guests, Wine Club members and external partners to encourage repeat visits.

About you

You’ll bring:

- Previous supervisory experience in a restaurant, cellar door, events venue or similar hospitality environment.

- Confidence leading a team while actively working on the floor.

- Strong organisation and the ability to coordinate several service areas at once.

- A calm, practical approach during busy services and events.

- Experience with stock control, ordering, rostering and booking or POS systems.

- Clear communication and a warm, skilled approach to guests.

- An interest in wine and confidence recommending products and experiences.

- A willingness to assist with setup, pack-down and the physical demands of hospitality.

- A valid NSW RSA and food handler certification before commencing.

Working Hours & Environment

This is a full-time, on-site role , with usual working days from Thursday to Monday . Hours vary according to service and event requirements, with weekend work and evening wedding shifts forming a regular part of the position.

Typical shifts are:

- Usual service: 9am–5pm.

- Saturday service: 9am–6pm.

- Weddings: 12pm–9pm.

The role involves extended time on your feet, working indoors and outdoors, moving between venues and assisting with furniture and event equipment. On busy days, you’ll lead service while coordinating staff, guests, stock and multiple spaces.
