Chotto Matte is a globally recognised Japanese-Peruvian fusion restaurant group, with venues in London, Manchester, Toronto, San Francisco and Riyadh. Our spaces are immersive vibrant Nikkei cuisine meets energetic beats to create a dining experience like no other. We're bringing that energy to Bondi, and we're looking for an experienced, hands-on Bar Manager to join our opening team.

About the Role

As Bar Manager, you'll be responsible for the supervision and day-to-day running of all bar areas within the restaurant, including beverage training, ordering, stock control and delivery of Chotto Matte's bar and beverage service standards. You'll ensure the bar department consistently delivers high-quality products in line with company standards, while maintaining effective cost control and supporting profitability.

Key Responsibilities

- Lead and support the bar team, overseeing day-to-day running of all bar areas
- Manage beverage training, stock control, ordering and cost control to Chotto Matte standards
- Supervise bar set-up,



cocktail specifications and presentation to ensure consistency and quality
- Oversee recruitment, performance and development of the bar team
- Ensure licensing, health, safety and hygiene requirements are followed at all times

What We're Looking For

- Minimum 3 years' experience in bar and restaurant management
- Strong bar leadership and team management skills
- Good understanding of beverage service, stock control and operational bar standards
- Current RSA (Responsible Service of Alcohol) certificate required
- Energetic, enthusiastic and confident, with the ability to remain calm under pressure
