Felons is currently recruiting for a Sous Chef – Pizza to join a team that values quality, sustainability and collaboration. We’re after a true pizza specialist who thrives in a busy service and owns everything from dough to pass.

Key Responsibilities include:

- Lead the pizza section through service, from dough production and prep to stretching, topping and oven management
- Assist the Head Chef with menu planning, recipe development and pricing
- Lead, train and mentor junior pizza chefs, and step into the Head Pizza Chef role when required
- Manage stock, ordering, cost control and rostering in line with service needs and budget
- Ensure the highest standards of food safety, hygiene, HACCP and WHS are always maintained

About you:

- Solid experience in a busy,



high-volume pizzeria
- Confident across every pizza task: dough, prep, stretching, topping and oven
- Able to handle a slammed service while keeping quality and consistency on point
- Certificate III in Commercial Cookery, with experience leading and training junior team members
- Flexibility and availability to work across a rotating roster
