About Baker Bleu

Baker Bleu was founded in 2016 by Mike and Mia Russell with a clear ambition: to create ethical, deeply flavoured sourdough with patience. From a small shop in Elsternwick, we have grown into a bakery grounded in tradition, community and craft, with our signature dark crust becoming a defining part of who we are.

Today, Baker Bleu has locations across Melbourne and Sydney, supplies leading restaurants and remains closely connected to the communities around each store. Our shelves are filled daily with freshly baked sourdough bread, pastries and food to share.

We are on the hunt for an experienced Head Barista or Barista ready to take the next step in their career, to establish and lead the coffee program at our brand-new Bondi bakery, in a stunning location just moments from the beach.

About the Role

As Head Barista, you’ll take ownership of the coffee operation — leading and developing the barista team, maintaining exceptional coffee standards, managing workflow and ensuring every cup represents the quality Baker Bleu is known for.

· Lead, support and motivate the coffee team during service.

· Deliver excellent coffee standards and customer service.

· Work closely with Market Lane as a representative of their exceptional speciality coffee.

· Ensure the coffee operation is stocked, well-presented and quality standards are maintained at all times.

· Work closely with FOH, production, and kitchen teams, embracing a holistic approach store operations.

About You

You’re a positive, reliable and customer-focused barista, with pride in coffee quality, presentation and genuine hospitality. You enjoy working hands-on, staying calm under pressure and making each customer feel welcome. You are passionate about coffee, enjoy building relationships with suppliers and developing seasonal drink specials.

· Head Barista or strong Barista experience in a café, bakery or rapid-paced hospitality environment.

· Strong coffee preparation skills, quality control, including dialling in, equipment maintenance and cleanliness.

· Genuine passion for all things coffee, quality, sustainability and innovation.

· Strong communication and leadership skills, experience in training and coaching staff.

· Excellent attention to detail in coffee presentation, equipment maintenance and team building.

· Full Australian working rights.
