Mercure Brisbane Spring Hill has entered an exciting new chapter, and we're looking for a passionate
Sous Chef
to join our kitchen team and be part of the journey.
Following an extensive transformation of the hotel, we've recently launched Parklands Social: NY Deli & Grill - our brand new signature restaurant and bar, inspired by the golden age of New York's social clubs and brought to life with quality Queensland produce, bold flavours and a relaxed, welcoming approach to dining.
Now, we're looking for a talented Sous Chef who is ready to make their mark.
About The Role
Reporting to our Executive Chef, you'll play a key role in the day-to-day running of the kitchen, supporting the team to deliver consistently exceptional food across Parklands Social, hotel operations and events.
This is a hands‐on leadership role for someone who loves being in the kitchen, enjoys developing people and takes genuine pride in what comes out of the pass.
You'll Be Responsible For
Supporting the Executive Chef with the smooth and successful operation of the kitchen
Leading, motivating and developing our kitchen team across daily operations and service
Ensuring consistently high standards of food quality, presentation and preparation
Working closely with the team to deliver the Parklands Social menu and maintain its food philosophy
Assisting with menu development, specials and new ideas as the restaurant continues to evolve
Managing mise en place and ensuring the kitchen is fully prepared for each service
Supporting stock management, ordering, food cost control and minimising wastage
Ensuring food safety,



hygiene and WHS standards are consistently maintained
Working collaboratively with our Food & Beverage team to create a seamless guest experience
Supporting the Executive Chef with training, coaching and developing our kitchen team
Stepping up and taking ownership of the kitchen in the absence of the Executive Chef
We're Looking For Someone Who
Has previous experience as a Sous Chef or in a senior Chef role
Has strong technical culinary skills and a genuine passion for food
Is confident leading and developing a kitchen team
Thrives in a quick‐paced hospitality environment
Takes pride in consistency, quality and presentation
Has a strong understanding of food safety and kitchen hygiene
Understands the importance of food cost, stock control and minimising waste
Is organised, calm under pressure and leads by example
Enjoys contributing ideas and being part of something that is still evolving
Brings a positive attitude, strong work ethic and plenty of personality to the kitchen
