Breakfast & Pastry Chef - Pure Bread Bakery | Graceville
Pure Bread Bakery is a new artisan bakery and café in Graceville, focused on handcrafted sourdough, croissants, pastries, cakes, sandwiches and quality coffee.
We are looking for an experienced Breakfast & Pastry Chef to join our team in a full-time role, working five days per week with early morning starts from approximately 4:30-5:00am.
This is a varied, hands-on position combining café/breakfast kitchen work with pastry and bakery production. We need someone who is genuinely comfortable across both areas - not someone who only has experience in one section of a kitchen.
You will be responsible for preparing our morning food offering and ensuring the bakery is fully stocked and ready for service. The role includes sandwich and breakfast preparation, baking and finishing croissants and pastries, preparing cakes and tarts, chia puddings and overnight oats, sauces, fillings and other daily production.
As we are a small, quality-focused venue, you will need to be comfortable working independently, managing your own prep list and moving quickly between different areas of production.
Key responsibilities
Preparing breakfast and café food for daily service
Preparing and assembling sandwiches and other grab-and-go products
Baking and finishing croissants, danishes and other viennoiserie
Preparing cakes, tarts and other pastry items
Preparing chia puddings, overnight oats and similar breakfast products
Preparing fillings, sauces, compotes and other components
Following recipes, production sheets and portion specifications accurately
Ensuring all products are prepared and available before service
Managing daily prep and production efficiently
Monitoring stock levels and communicating production requirements
Maintaining consistency in presentation, portioning and quality
Receiving and rotating ingredients correctly
Maintaining excellent food safety, hygiene and cleaning standards




Minimising food waste and ensuring ingredients are handled correctly
Working closely with our bakery, pastry and front-of-house teams
Assisting with new products and seasonal menu development where required
About you
We are looking for someone with strong practical kitchen skills who can walk into an early-morning production environment and get things done.
Ideally, you will have:
Previous experience as a Breakfast Chef, Pastry Chef, Chef or experienced Cook
Solid breakfast and café production experience
Pastry or bakery experience, particularly with croissants and viennoiserie
Experience working in a quality café, bakery, hotel or high-volume kitchen
Excellent organisation and time-management skills
The ability to work independently without constant supervision
Confidence managing multiple prep and production tasks simultaneously
Strong attention to detail and consistency
A good understanding of food safety and allergen management
The ability to work quickly while maintaining a high standard
Reliability - particularly given the early morning start times
A positive attitude and willingness to work as part of a growing team
Formal cookery or pastry qualifications are highly regarded, although strong relevant industry experience is also important to us.
Hours
This is a five-day-per-week position.
Shifts generally commence between
4:30am and 5:00am
, so applicants must be able to reliably travel to Graceville for early morning starts.
Weekend availability is required.
