Experienced Sushi Maker & Shop Supervisor (Takeaway)

We are looking for an experienced, reliable Sushi Maker / Shift Supervisor to join our team at our takeaway shop located just off the M1 (Exit 75).

This is a senior hands-on role suited for someone with proven Japanese kitchen experience who can run daily operations, manage shop floor routines, and confidently open or close independently.

Role Overview
Type: Casual (approx. 25–35 hours/week, with potential for secure ongoing hours)
Location: Just off M1, Exit 75 (Own reliable vehicle required; area is not easily accessible via public transport)
Trading Hours:
Monday – Wednesday: 8:00 am – 4:00 pm
Thursday – Friday: 8:00 am – 4:00 pm & 5:00 pm – 9:00 pm
Saturday: 8:30 am – 3:30 pm
Must be available for a combination of opening, midday prep, and closing shifts.

Key Responsibilities
Kitchen Operations & Sushi Making: Prepare sushi rolls, nigiri, hot food, and side items quickly to high standards while maintaining speed during peak rush periods.
Prep & Inventory: Manage raw ingredient prep (knife work, marinating, portioning), monitor daily prep levels, and assist with stock rotation.
Opening & Closing Management: Execute start-of-day kitchen setups (appliance startup,



display stock) and thorough end-of-day closures (sanitation, pack-down, lock-up).
Shop & Shift Leadership: Oversee counter flow, deliver friendly customer service, handle POS transactions, and guide junior casual staff during service.
Food Safety & Compliance: Maintain strict hygiene, temperature control logs, and clean-as-you-go standards across kitchen and customer areas.

What We Are Looking For
Prior Sushi Experience: Proven hands-on experience in sushi production and rapid-paced commercial kitchen prep.
Supervisory / Self-Direction: Demonstrated experience opening/closing a food venue and working autonomously without constant direction.
Reliability & Communication: Punctual, organized, with explicit communication and a proactive work ethic.
Transport: Must hold a valid driver's licence and have your own reliable vehicle to come to the shop
