Position: Cook Position Type : Full time Salary : $79,000 to $82,000 plus superannuation per annum Location: Burpengary QLD **** Our client is seeking is seeking a Cook to join their Japanese restaurant located in Burpengary, Queensland.
The Cook is a hands-on member of the kitchen team responsible for preparing, seasoning and cooking food for the restaurant.
The role supports daily service through food preparation, cooking menu items using commercial kitchen equipment, preparing cooked components for the Japanese menu, and maintaining food quality, presentation, hygiene and safe food handling standards.
Key Duties and Responsibilities: ·Prepare and cook Japanese menu items in accordance with Sushi Metro's recipes and service requirements, using appropriate cooking methods and commercial kitchen equipment.
·Complete daily food preparation and mise en place, including washing, cutting, trimming, slicing, marinating and portioning ingredients.
·Prepare ingredients and cooked components for sushi, aburi dishes, ramen, udon, rice dishes, teriyaki, tempura and other menu items as required.
·Monitor cooking times, temperatures and equipment to ensure food is cooked safely, consistently and to the required standard.
·Season and finish dishes in accordance with established recipes, specifications and presentation standards.
·Portion and plate food consistently, including applying sauces, garnishes and other finishing elements as required.
·Check the quality and freshness of ingredients before and during preparation and report any unsuitable or poor-quality food.
·Prepare food in accordance with customer dietary requirements and applicable allergen procedures.
·Store, label and rotate ingredients and prepared food appropriately, maintaining required temperature controls to support food safety and minimise wastage.
·Maintain the allocated kitchen area, preparation surfaces, utensils and cooking equipment in a clean, hygienic and service-ready condition.
·Work with other kitchen and front of house staff to coordinate orders and maintain efficient service during busy periods.
·Assist with monitoring and replenishing ingredients and kitchen supplies, including stock rotation and stocktakes as required.
·Follow all applicable food safety, hygiene, workplace health and safety and company procedures.
Requirements: ·AQF Certificate III or higher qualification in relevant field.
·At least one (1) year of work experience as a Cook or in a similar commercial kitchen role.
·Previous experience working with Japanese cuisine highly regarded.
·Ability to prepare and cook food using a range of cooking methods and commercial kitchen equipment.
·Sound knowledge of food safety, hygiene, safe food handling and temperature-control practices.
·Ability to prepare food consistently in accordance with recipes, portion requirements and presentation standards.
·Ability to work efficiently in a fast-paced restaurant and kitchen while maintaining food quality and service standards.
·Good teamwork, communication and organisational skills, with flexibility to work evenings, weekends and public holidays as required.
