About the role
This position is responsible for organising and controlling the bar and beverage operations of the venue as a distinct hospitality establishment. The role oversees the full beverage programme, sake cellar, stock control, licensing compliance, staff management across the bar and floor team, and the commercial performance of the bar. The position requires specialist sake expertise to design and manage a sake-focused beverage offering, with a managerial focus on venue operations, compliance, and business control.
Key responsibilities
- Direct and oversee the day-to-day operations of the bar, including opening and closing procedures, service standards, and venue presentation
- Plan and organise special functions, sake tastings, and beverage-focused events, including omakase experience, masterclasses and seasonal menu launches
- Design and curate the sake and beverage list, including sourcing, importing, and maintaining relationships with Japanese breweries and suppliers
- Manage the sake cellar and beverage inventory, including rotation, storage conditions, stocktake procedures, and minimising wastage
- Control the selection, training, and supervision of bar and floor staff, including rostering, performance management, and product knowledge development
- Manage the bar budget, including cost of goods sold, labour costs, and venue profitability,
and oversee purchasing and pricing of beverage goods in accordance with budgetary targets
- Maintain records of stock levels, financial transactions, and supplier accounts, and assess customer satisfaction to implement improvements
- Observe liquor, health, and other relevant laws and regulations applicable to the licensed venue, including responsible service of alcohol obligations
- Monitor quality at all stages of beverage preparation and presentation, ensuring consistency with venue standards
- Ensure compliance with occupational health and safety regulations across the bar and service areas
About you
- An AQF Associate Degree, Advanced Diploma or Diploma in Hospitality Management, or at least three years of relevant experience in bar or beverage management
- One year full time experience as a Bar Manager or in a similar hospitality management role
- Demonstrated experience in roster management, stock control, and budget oversight in a licensed hospitality venue
- Specialist knowledge of sake production, styles, and service (Kikisakeshi certification or equivalent highly desirable)
- Current Responsible Service of Alcohol (RSA) certification and relevant liquor licensing knowledge
- Strong leadership and staff management skills, with experience supervising bar and floor teams
- Proficiency in beverage cost control, supplier negotiation, and inventory management systems
