About Manga Sushi

Rolling Foods Pty Limited, trading as Manga Sushi, operates three Japanese food retail outlets located at Bondi Beach, Bondi Junction and Coogee.

We specialise in freshly prepared sushi, sashimi and Japanese takeaway food. We are seeking an experienced Retail Manager to organise and manage the day-to-day retail operations of our business.

The successful applicant will be primarily based at our head office at Bondi Beach, but will also be required to work at our outlets at Bondi Beach, Bondi Junction and Coogee from time to time as reasonably required.

About the role

Reporting to the business owner, the Retail Manager will have responsibility for the effective operation of the retail outlet, including staff management, stock control and purchasing, customer service, sales performance, budgeting, product standards and regulatory compliance.

The role requires an understanding of the operational requirements of a Japanese takeaway food business, including the importance of replenishing stock in time to ensure freshness, efficient stock rotation, food safety, quality consistency, waste control and high-volume customer service.

Key duties and responsibilities

The Retail Manager at Manga Sushi will be responsible for duties including:

- organising and controlling the day-to-day operations of the Manga Sushi retail outlets;
- determining appropriate menu, stock levels and customer service standards having regard to customers’ taste, preference, and seasonal sales patterns;
- monitoring sales performance and setting prices and implementing promotional strategies;
- liaising with suppliers and assisting with supplier selection, purchasing arrangements and pricing;
- purchasing and ordering ingredients, packaging and other retail supplies and maintaining appropriate inventory levels;
- monitoring stock movement, wastage and product yields,



particularly for fresh and perishable Japanese food products;
- maintaining records relating to stock levels, sales, expenses and other financial transactions;
- assisting with and monitoring store budgets, revenue, operating expenses and profitability;
- recruiting, rostering, training, supervising and managing staff;
- allocating staff duties and monitoring employee performance and service standards;
- establishing and maintaining consistent product presentation and flavours and customer service standards;
- ensuring appropriate procedures are followed for food handling, food safety, workplace health and safety, cleanliness and other applicable regulatory requirements;
- Implementing operational standards across Manga Sushi's Coogee, Bondi Beach and Bondi Junction locations where required; and
- responding to customer enquiries and complaints and maintaining a high standard of customer service;
- implementing marketing, promotional and merchandising activities;

Skills, qualifications and experience

Applicants should have:

- a qualification at AQF Diploma level or higher, or an overseas qualification of a comparable level, preferably in Business Management, Retail Management, Hospitality Management or a closely related field;
- relevant experience at an appropriate managerial level in a retail, takeaway food or similar hospitality retail environment;
- demonstrated experience managing the day-to-day operations of a retail or takeaway food outlet, including staff supervision, rostering, stock control, purchasing,



customer service and financial performance;
- demonstrated experience in managing staff, including recruitment, training, performance supervision and allocation of duties;
- sound understanding of inventory management, purchasing, food cost and wastage control;
- experience monitoring sales, expenses and store profitability;
- knowledge of food safety, workplace health and safety and other compliance requirements relevant to food retail operations;
- strong organisational, leadership, communication and customer-service skills; and
- the ability to work across Manga Sushi's Coogee, Bondi Beach and Bondi Junction stores when reasonably required.

Experience in Japanese restaurants or a similar fast-food environment is highly regarded. Knowledge of sushi, sashimi and Japanese meals, ingredients, product freshness, presentation standards and stock/wastage management would be advantageous.

What we are looking for

We are looking for a hands-on retail manager who can take responsibility for the commercial and operational performance of busy Japanese food retail outlets. The successful applicant will combine strong staff-management and retail-management skills with an understanding of the operational requirements of selling fresh Japanese food to the public.

This is a management position. While familiarity with sushi and Japanese food preparation is beneficial for managing product quality, staff, stock and operational standards, the primary responsibilities of the role are the management and control of the retail operation.
