As Head Chef at Ilma Beach House, you will profitably manage the overall kitchen operations ensuring quality of product, customer satisfaction and financial control, and compliance with all health and safety procedures. You will work constructively and positively as part of the Beach House management team in making the restaurant one of the best venues in the South West.
Key responsibilities
- Maintain the food, service, ethos and reputation of the Beach House
- Maintain a deep understanding of current food trends and incorporate appropriate elements into the business
- Maintain health and safety regulations and ensure the appearance and cleanliness of the kitchen are of the highest standard
- Manage kitchen budget parameters with appropriate management of food expenses and labour
- Control of wastage and accurate written costings of all menus
- Communicate and monitor portion control and conduct stocktakes
- Ensure a contemporary and high standard of restaurant style food and service provision
- Roster kitchen labour to ensure service excellence and day-to-day management and organisation of the kitchen
- Assess training needs and provide on-the-job training to ensure staff development
- Maintain a safe working environment and ensure timely and accurate completion of food audits
About you
- Previous similar position in fine dining, quality restaurant, brasserie, hotel, resort or similar
- Uncompromising attention to food preparation detail and customer satisfaction
- Food cuisine understanding and interests
- A hands-on management style with proven leadership qualities
- A strong desire to achieve business goals and targets
- Versatile work ethic with a passion to create unique and memorable dining experiences
- Effective communication skills with staff, management and suppliers
- Computer literate with strong administration skills
- Previous experience writing rosters and achieving food and labour costs
- Able to work in a fast-paced environment
