The Role

You’ll take full ownership of the beverage department — standards, people, profit, and performance.

What you’ll be responsible for:
Leading day-to-day beverage operations with discipline and attention to detail
Recruiting, training, and developing a high-performing bar team
Designing seasonal cocktail and wine programs that balance creativity with profitability
Managing inventory with precision — tight stock control, minimal waste, zero complacency
Driving cost control, margin optimisation, and smart pricing strategies
Analysing sales performance and reporting accurately on results




Ensuring full compliance with licensing, safety, and operational standards
Maintaining a polished, organised bar that reflects the calibre of the venue
Setting the tone for qualified, consistent, old-school hospitality
