The head chef is responsible for running the kitchen along with two other senior chefs, a team of sous chefs and kitchen hands. The chef is required to cook during busy service days or evenings. The chef we are looking for will have solid experience in Italian food and breakfast/café style service.

Key responsibilities

Responsible for purchasing supplies and maintaining good ethical relationships with suppliers and staff

Plan and execute menus, continuing the fixed menu and developing seasonal dishes and breakfast, lunch and dinner specials

Bring ideas for specials and encourage staff to contribute to daily specials

Build and manage an effective kitchen team of around 15 people, including 9 chef/cooks and 6 kitchen hands

Oversee hiring, training, rostering, task allocation and people management/supervision

Oversee all aspects of food safety and deal with the health department as required

Implement and maintain a good cleaning regime throughout the kitchen and back of house areas

Ensure systems are in place to deal with any issues that may arise and that someone senior is on site or available at all times





Consult regularly with the owner, offer ideas and suggestions, and take input and direction
