Brand-New High-Volume Venue | Moreton Bay | Opening Early 2027 Lead the kitchen from day one. n
The Country Club Hotel is a brand-new entertainment and hospitality destination bringing together great food, live sport, entertainment and recreation all under one roof.

The venue will feature indoor and outdoor dining, multiple bars, a mega HD screen showing live sport, a gaming room and a huge range of sporting and entertainment facilities for the whole family to enjoy.

Set to become one of Moreton Bay’s go-to destinations for sport, entertainment and a great day or night out, we’re building a team to help bring the venue to life!
The OPPORTUNITY n
We are seeking an experienced Head Chef to lead the kitchen operation at The Country Club Hotel.
n
Opening in early 2027 , this will be a high-volume, fast-paced venue requiring a strong leader who knows how to deliver quality food consistently at scale.
n
This is a genuine opportunity to help build a kitchen from the ground up — from recruitment and systems through to standards, culture and day-to-day operations.
ABOUT THE ROLE n
As Head Chef, you will take ownership of the kitchen and play a key role in the venue’s pre-opening and opening phases.
n
Key responsibilities include:
n
n
- Leading, mentoring and developing the kitchen brigade
n
- Recruiting and onboarding the opening kitchen team
n
- Establishing kitchen systems, procedures and standards
n
- Delivering consistent, high-quality food through high-volume service
n
- Managing food costs, stock control, wastage and suppliers
n
- Managing labour, rosters and kitchen productivity
n
- Maintaining strong food safety and compliance standards
n
- Supporting menu development, costing and implementation
n
- Working closely with venue management to achieve commercial targets
n
- Building a positive, accountable and high-performing kitchen culture
n
ABOUT YOU n
We’re looking for an experienced kitchen leader who is comfortable in a busy environment and understands the discipline required to run a successful high-volume operation.
n
Ideally, you will have:
n
n
- Experience as a Head Chef, Executive Chef or Senior Sous Chef
n
- Experience in pubs, clubs, hotels or large restaurants
n
- Strong leadership and people-management skills
n
- Proven food cost, labour and wastage management
n
- Strong menu development and food-costing knowledge
n
- The ability to maintain quality and consistency under pressure
n
- A hands-on leadership style
n
- Previous venue-opening experience will be highly regarded
n
