This is a hands-on Bar Manager position at Gilson, an Italian-influenced all-day restaurant in South Yarra opposite the Royal Botanic Gardens. You'll spend much of your time behind the bar during service, keeping drinks moving quickly and to standard for a busy restaurant floor, while taking ownership of how the bar operates.

Key responsibilities

Work the bar during service, producing drinks for the floor quickly, accurately, and consistently

n
n

Manage beverage ordering, supplier relationships, and par levels

n
n

Run regular stocktakes and maintain tight stock control to minimise wastage and variance

n
n

Take accountability for beverage COGS and bar-related costs

n
n

Keep the bar clean, organised, and well maintained, including equipment, glassware, and beer lines

n
n

Train and support bar staff so the bar runs smoothly on every shift

n
n

Work closely with the management team on rostering, events, and venue performance

n
n

About you

n
n

Experience running or senior bartending in a busy, quality venue

n
n

Highly organised, with strong stock control and ordering experience

n
n

Fast, efficient, and calm behind a busy dispense bar

n
n

Commercially minded: you understand COGS, wastage, and margins

n
n





Takes pride in a clean, well-maintained, well-run bar

n
n

A team player who leads by example
