APRBS Kardinya Pty Ltd trades as Ria Ayam Penyet, an Indonesian restaurant in Kardinya, Western Australia. It belongs to a family-owned restaurant group that has served authentic Indonesian food since 1998, and it is known for crispy smashed chicken, house-made sambal and traditional family recipes cooked with authentic spices. The restaurant opens seven days a week for dine-in, takeaway, pickup and delivery through major online platforms, and it also caters for group bookings, celebrations and private functions. The team of thirteen works to the values that built the brand: staying true to Indonesian flavours, giving every guest warm and attentive service, and running a clean, safe and well-organised venue where staff are trained and supported to do their best work.

About the Position

The Restaurant Manager is responsible for the day-to-day running of the Kardinya restaurant and reports directly to the Director and the Financial Director. The role leads a team of five front-of-house and kitchen staff across a busy seven-day trading pattern, balancing dine-in service with a high volume of takeaway and delivery orders. Working closely with the Chef, the Restaurant Manager shapes the menu and beverage offering, plans functions and group bookings, controls costs and stock, and makes sure the venue meets food safety, hygiene and workplace health and safety requirements.



The position is central to the restaurant's service standards, its profitability and the consistency of the guest experience that the brand is known for.

Key Responsibilities

- Develop and update food and beverage offerings in collaboration with the Chef, taking customer preferences, operational requirements and the restaurant's budget into account.
- Coordinate the preparation and delivery of private functions, group bookings, celebrations and other special dining events, ensuring appropriate staffing, food and beverage arrangements and service standards.
- Oversee the presentation, cleanliness and functionality of the dining and customer areas, ensuring the premises, facilities and equipment are maintained in line with food safety, hygiene and health requirements.
- Communicate with customers about their dining experience and service, obtain feedback, and resolve concerns and service issues to maintain a high level of customer satisfaction.
- Recruit, induct, train, roster and supervise front-of-house and kitchen employees, providing guidance, direction and ongoing feedback to maintain effective team performance.
- Plan and control stock levels, place orders for food, beverages and specialised Indonesian ingredients,



and maintain relationships with suppliers.
- Monitor sales, food costs and labour costs against budget, maintain accurate financial and operational records, and oversee daily cash handling and reconciliation.
- Coordinate dine-in, takeaway, pickup and third-party delivery orders so that service runs efficiently and meals leave the kitchen on time and to standard.
- Ensure the restaurant complies with food safety, hygiene and work health and safety legislation, including staff training, record keeping and incident reporting.
- Report to the Directors on trading performance, staffing and operational matters, and recommend improvements to service, menu and efficiency.

Requirements

- Australian citizens and permanent residents are encouraged to apply.
- AQF Associate Degree, Advanced Diploma or Diploma qualification; at least three years of relevant experience may substitute for the formal qualification.
- At least three years of relevant experience in restaurant or hospitality management.
- Sound knowledge of food safety, hygiene and work health and safety requirements, with experience in rostering, stock control, cost control, POS systems and online delivery platforms.
- Strong leadership, communication and customer service skills, with the ability to solve problems calmly during busy service and to work flexible schedule, including weekends and public holidays.
