We are looking for an experienced Retail Manager to organise and control the day-to-day operations of Tavira Bakehouse. You will be responsible for the store's commercial performance, customer service standards, stock and production planning, and staff team.
Key responsibilities
Decide the store's product mix, daily stock and bake quantities, and service standards, based on sales trends, market foot traffic, seasonal demand and wastage of fresh baked goods
Develop and carry out purchasing policies, source and negotiate with suppliers of flour, dairy, coffee, packaging and other inputs, and set retail prices and margins
Plan and run promotional and marketing activity, including product launches, seasonal and holiday ranges, in-store displays and merchandising, and cross-promotion with Fruitezy
Sell products to customers, advise them on the range, ingredients and allergens, and take and manage special and bulk orders
Keep accurate records of stock levels, ingredient usage, production and wastage, and financial transactions, including POS reconciliation and daily takings
Prepare and manage the store budget, monitor sales, labour, ingredient and operating costs against targets, and report on performance
Control the recruitment, selection, rostering, training and supervision of retail, barista and bakery staff, and handle performance management




Ensure compliance with work health and safety legislation, NSW food safety and hygiene requirements, allergen labelling obligations, and centre and company policies
About you
A Diploma or higher qualification in Retail Management or a related field
At least 1 year of relevant experience in retail management
Proven experience managing stock, budgets and staff in a retail environment
Robust commercial awareness and the ability to set prices and manage margins on perishable products
Brings forward and executes exciting ideas for product and marketing, also on improving efficiencies
Excellent customer service and communication skills
Good computer skills, including POS and inventory systems and Microsoft Office
Knowledge of WHS and food safety obligations in a food retail setting

Fruitrite Pty Ltd trading as Tavira Bakehouse runs a retail bakery at Sydney Fish Market, next to our sister business, Fruitezy. Our breads, pastries and sweet treats are baked fresh on site every day, and we serve barista-made coffee to market visitors, locals and regular customers.
38 hours per week plus reasonable additional hours, rostered across the store's trading days, including early mornings and weekends
