Three bars, a American diner, live music and a car park full of chrome. We need someone to own the numbers behind it.
Ricks Garage is a big American-style diner on the Sunshine Coast hinterland. We have three bars: the Whiskey Bar (est. ****, with 100+ whiskeys and a proper cocktail list), the Retro Bar and the Garden Bar. Next door is the Rick's Garage Bakehouse. We run functions for up to 200 guests, host car and bike club meets, put on live music and get very busy on weekends.
WHAT YOU'LL DO
Lead the floor
Lead the FOH and bar teams across the diner, Whiskey Bar, Retro Bar and Garden Bar
Set the service standard from the moment guests walk in until they leave, at tables and at the bar
Hold the standard: every cocktail to spec and every table looked after
Train and develop floor staff and bartenders through our structured training pathways
Be on the floor during peak trade, not in the office
Own the numbers
Manage beverage ordering, stock and supplier relationships
Run monthly stocktakes and act on the variances
Drive FOH and bar revenue, average spend and beverage GP




Build FOH and bar rosters to budget and hit your labour targets
Keep an eye on bookings so the floor is set up and staffed for what's coming
Grow the offer
Develop drinks lists, specials and promotions that bring people in
Work with the kitchen on menus, specials and function packages
Make sure functions and events run smoothly on the night, from setup to last drinks
Lift our Google reviews and make sure every complaint is dealt with on the shift
Bring new ideas to make Rick's Garage the place people come back to
WHO WE'RE LOOKING FOR
At least 2 years' experience as a Bar Manager, F&B; Manager or Venue Manager in a high-volume venue
You know your GP, COGS and labour percentages and can explain what moves them
A leader who holds standards, coaches people and doesn't walk past a problem
Available weekends, evenings and public holidays
