About Laneway:
Laneway Colac is a Mexican-forward hotspot opening down a beautiful brick laneway at 4/144 Murray Street, Colac — seek and you shall find... Tacos loaded with slow-cooked, grilled and crackling-crispy meats, fresh fish and seafood, and a genuine range of vegan and vegetarian dishes, house made salsas built around seasonal produce. There is something for everyone! Fancy a coffee to start the day? Or wind-down with a mocktail, cocktail, beer or wine? Laneway has you covered. Fresh, modern and relaxed, with outdoor seating for balmy nights and eclectic tunes — it's a place to escape the everyday. We're backed by an owner-operator with years in hospitality, building the founding team now.
Looking for all kitchen staff: Experienced Cook, Line Cooks, Prep Kitchen Staff, Kitchen hands.
As well as Front of House Staff: Supervisor, Bar, barista, Floor.
Role Overview: As our Experienced Cook, you'll help run the kitchen day to day — from prep through to plate — using the recipes and systems we've already built for a brand-new Mexican-forward restaurant. This suits someone who wants genuine autonomy running a kitchen, is properly comfortable on a flat-top grill, fryer and oven, and enjoys fine-tuning a system to make it run better as we grow — you don't need a chef's ticket, you just need experience and the confidence to run service.
Key Responsibilities:
• Prepare and cook Mexican-forward dishes — tacos, share plates, grilled items, fresh salsas and accompaniments — with consistency and flavour across every service, following our established recipes and prep methods
• Help refine recipes, prep methods and kitchen workflow with minor tweaks for efficiency as we grow — building on what's there, not starting from scratch
• Hold Food Safety Supervisor responsibilities for the kitchen, upholding food safety, cleanliness and organisation- We can help you attain this certificate.
• Manage prep,
stock and rotation, and service workflow to keep the kitchen running smoothly under pressure
• Train and guide kitchen staff (Cook, Kitchen Hand) as the team grows, building a positive, low-ego culture
• Run high-volume service, dine in, takeaway and catering with a great team.
Qualifications and Experience:
• Hands-on experience running a flat-top grill, fryer and oven in a busy commercial kitchen
• No formal chef qualification required — genuinely capable cooks without a Certificate III/IV are encouraged to apply; formal training is a bonus, not a must
• Solid experience running a section or a kitchen in a busy commercial venue, ideally with some leadership experience
• Comfortable following an established system precisely and consistently, with a good eye for small efficiency improvements along the way
• Experience with Mexican, Latin or similarly bold, spice-driven cuisine highly desirable; strong all-round cooks willing to learn are welcome
• Holds (or willing to obtain) a Food Safety Supervisor certificate
What We Offer:
• Real ownership of running service day to day — a proven system to work with, not a blank page to figure out alone
• Restaurant Award wages and entitlements — be valued, personally and financially, for the work that you do
• $68,000–$72,000 per year + superannuation, depending on experience
• Brand new fit out kitchen built for you and your team in mind!
• A genuinely supportive, positive vibes culture built on Discovery, Escape, Belonging- more on this in your induction
• Real input into how the kitchen runs as Laneway grows- this is a career that builds as we grow
