Renowned for its welcoming atmosphere, onsite craft brewery, and distinctive culinary offering, the venue serves a diverse menu featuring American BBQ-style dishes with meats smoked onsite, classic pub meals, daily specials, and handcrafted artisan baked goods. Operating in a vibrant, high-volume environment, Kenilworth Hotel & Brewery is committed to food quality, consistency, operational efficiency, and genuine hospitality seven days a week.
They are now seeking a qualified and passionate full-time Baker to join their kitchen and bakery team in Kenilworth, QLD. Reporting to the Head Chef and venue management, the role is responsible for overseeing the daily baking production schedule, preparing signature artisan breads, savory pies, pastries, and desserts, maintaining strict food safety standards, and ensuring display cases are stocked for daily trade. It calls for strong technical baking skills, attention to detail, and a collaborative team attitude.
This is a full time position offering a competitive salary within the range of $75,000 to $85,000 AUD per annum, plus superannuation, benchmarked against market rates and commensurate with technical skill, experience, and operational accountability.
SCOPE OF THE ROLE:
- Planning and preparing the daily baking and production schedule to ensure fresh breads, pastries, savory pies, and catering orders are ready prior to daily service periods.
- Mixing, preparing, weighing, and measuring ingredients for the production of signature artisan breads, handcrafted pastries, pie crusts, and traditional baked goods.
- Preparing and baking Kenilworth Hotel & Brewery's daily range of handcrafted breads (white, wholegrain, and specialty loaves), hearty smoked meat and vegetarian pies, and takeaway baked items.
- Decorating custom and ready-made cakes, tarts, and celebration desserts using various icings, sponges, toppings, and decorative finishes to ensure exceptional visual presentation.
- Glazing buns and pastries, and decorating celebration cakes with cream and icing according to customer specifications and high venue standards.
- Monitoring stock levels for baking ingredients (flour, sugar, pie fillings, specialty toppings) and submitting accurate orders within allocated budgets to management.
- Contributing creative ideas to the menu and participating in seasonal pastry, custom cake, and event catering menu development.
- Inspecting the quality of raw materials and verifying the operational condition and safety of commercial baking equipment, mixers, and ovens.
- Complying strictly with food hygiene, food safety, HACCP, and sanitation requirements across all prep and baking areas.
- Maintaining a sanitized and orderly environment in the kitchen, preparation areas, storage rooms, and display cases.
- Ensuring all raw ingredients, prepared fillings, and finished items are stored properly at correct temperatures.
- Keeping accurate daily production, temperature, and inventory records to maintain consistency and yield control.
- Operating a variety of commercial bakery equipment, deck/convection ovens, mixers, and dough sheeters safely and efficiently.
- Identifying staffing needs and assisting in onboarding, recruiting, and training junior kitchen personnel.
- Maintaining a clean and hygienic work environment at all times in accordance with venue WHS protocols.
TO BE CONSIDERED FOR THIS ROLE, YOU SHOULD:
- Hold a relevant qualification — Certificate III in Baking, Certificate III in Commercial Cookery, or an equivalent combination of formal qualification and industry experience.
- Have at least 2+ years of professional hands-on work experience as a Baker in a commercial bakery, cafe, or high-volume hospitality environment.
- Demonstrated proficiency in dough preparation, pastry production, oven management, bake cycle control, and decorative finishing (glazing, icing).
- Strong working knowledge of food safety, hygiene protocols, HACCP compliance, and Occupational Health and Safety (WHS) regulations.
- Proven ability to perform efficiently in fast-paced operational environments under pressure.
- Excellent organizational, time-management, and communication skills with high attention to detail.
- Willingness to relocate to Kenilworth / Sunshine Coast hinterland region if currently based interstate or in another city.
- Full availability across early mornings,
day shifts, weekends, public holidays, and flexibility aligned with venue operating hours.
- Must hold valid Australian work rights at the time of application.
