About the role

This is a hands-on Bar Manager position at Gilson, an Italian-influenced all-day restaurant in South Yarra opposite the Royal Botanic Gardens. You'll spend much of your time behind the bar during service, keeping drinks moving quickly and to standard for a busy restaurant floor, while taking ownership of how the bar operates.

Key responsibilities

- Work the bar during service, producing drinks for the floor quickly, accurately, and consistently
- Manage beverage ordering, supplier relationships, and par levels
- Run regular stocktakes and maintain tight stock control to minimise wastage and variance
- Take accountability for beverage COGS and bar-related costs
- Keep the bar clean, organised, and well maintained, including equipment, glassware, and beer lines
- Train and support bar staff so the bar runs smoothly on every shift
- Work closely with the management team on rostering, events, and venue performance

About you

- Experience running or senior bartending in a busy, quality venue
- Highly organised, with strong stock control and ordering experience
- Fast, effective, and calm behind a busy dispense bar
- Commercially minded: you understand COGS, wastage, and margins
- Takes pride in a clean, well-maintained, well-run bar
