The Role
Spicers Hidden Vale have an exciting new opportunity for a Breakfast CDP to join our culinary team
As a member of our Salter Brothers Hospitality team, you’ll play a key role in creating meaningful experiences for both our guests and teammates through thoughtful service, attention to detail, and a commitment to continuous improvement.
About Homage Restaurant
Set on 12,000 acres, just one hour from Brisbane and upon some of the most fertile farming soil in the Southern Hemisphere, Homage Restaurant has a real sense of place. With offerings from an outdoor coal pit, smokehouse, wood-fire and rotisserie. Sustainability is at the heart of everything we do - including sustainability of our people.
We have an 89-bed market garden, fermentation room, orchard, bee hives and free range farm onsite, meaning that much of the produce is from Spicers Hidden Vale itself and anything that’s not, is collected directly from nearby farms. It's the small things, like ‘family meal time’ before service, having the opportunity to work outside in the garden and interacting with our guests that make the difference.
The role and key duties
- Deliver exceptional culinary dining experiences for guests, ensuring consistency, quality, and timely service across all offerings.
- Prepare and execute breakfast and lunch menu items to a high standard, using fresh, locally sourced ingredients and refined culinary techniques.
- Take ownership of the breakfast and lunch sections, ensuring efficient preparation, service, stock rotation, and mise en place.
- Maintain high standards of food presentation, quality, hygiene, and food safety in line with company and legislative requirements.
- Support the delivery of conferencing, functions, weddings, and special events as required, contributing to the overall success of the kitchen operation.
- Work collaboratively with the Head Chef and wider kitchen brigade to ensure smooth daily operations and deliver outstanding guest experiences.
- Assist with mentoring and supporting junior kitchen team members, fostering a positive and professional team culture.
- Contribute ideas for menu development, seasonal offerings, and continuous improvement initiatives within the kitchen.
Essential criteria required to be considered
- Trade-qualified Chef (essential).
- Previous experience as a Chef de Partie or strong Commis/Demi Chef ready to take the next step within a quality hospitality environment.
- Demonstrated ability to prepare, cook, and present high-quality breakfast and lunch dishes with strong attention to detail and consistency.
- Experience managing a busy breakfast service and confidently working across multiple kitchen sections.
- Strong organisational skills, with the ability to manage preparation, service, and stock control effectively.
- Positive team player who contributes to a cooperative kitchen culture and has a genuine passion for food and guest experiences.
- Commitment to maintaining a clean, organised, and compliant kitchen environment, adhering to all food safety and hygiene standards.
- Flexibility to work a rotating roster, including early mornings, weekends, and public holidays.
