What We Expect of You
n
n
A current Victorian RSA, full-time availability and valid Australian working rights is essential. Sponsorship is not offered for this role
n
Minimum 3 years' experience as in a F&B; Leadership role with an international luxury hotel chain, with demonstrated success managing multiple F&B; concepts and operations.
n
Technical knowledge of drinks including: Wine, spirits, cocktails, beer, sake, Japanese whisky, champagne, non-alcoholic beverages, and more
n
Operational skills including: Cocktail preparation, wine service, stock control
n
Knowledge and understanding of financial knowledge,



such as inventory, costs, expenses, and all cash handling procedures and policies
n
Driven for Results; setting high standards of performance for self and others; assumes responsibility for work objectives; initiating and monitoring progress towards accomplishment goals; proactively acts and goes above and beyond
n
Proven track record in revenue optimization and P&L; management, with ability to analyse financial data to implement strategic improvements and increase departmental profitability
n
Strong leadership qualities with experience developing and mentoring diverse teams, implementing training programs, and fostering a culture of excellence in guest service
n
Expert knowledge of food and beverage trends, innovative menu development, and premium wine/spirits curation specific to the Australian luxury hospitality market, supported by relevant industry certifications
n
Experience working with Brand standards and Luxury Quality audits
n
Confidence engaging with guests, and leading and working as part of a team
n
Embody a polished professionalism with an audacious approach to creativity; and to be a playful individual who is passionate in creating memorable guest experiences

A Glance at What You Will Do
n
The Beverage Manager is responsible for the strategic and operational leadership of the beverage function across W Melbourne, driving beverage revenue, profitability, innovation and service excellence across all hotel venues and beverage touchpoints.
n
n
Develop and execute a hotel-wide beverage strategy that maximises revenue and delivers distinctive beverage experiences aligned to the individual identity of each venue.
n
The role is commercially focused and highly guest-facing, combining revenue generation, beverage innovation, cost management, inventory control, supplier relationships, training and staff development
n




Ensure that beverage is treated as a significant commercial driver of the hotel's overall F&B; performance, rather than simply an operational support function
n
Establish menu development processes including: Concept, Recipe development, Costing, Pricing, Testing, Photography, Menu design, Staff training, Launch
n
Work with the Food and Beverage leadership team to determine areas of concern and develop strategies to improve the department's financial performance
n
Drive innovation by staying ahead of market trends and introducing new F&B; experiences
n
Build strong relationships with key beverage suppliers and distributors, negotiatinh pricing, rebates, incentives and commercial agreements
n
