Wallaby Foods Pty Ltd t/as Shimbashi Japanese Soba & Sake Bar is a busy Japanese soba restaurant and sake bar. The business employs approximately 18 staff across its operations, with a fast-paced, team-oriented kitchen focused on traditional techniques and quality.
We are seeking a a skilled and reliable chef with a passion for traditional Japanese cooking, strong attention to detail, and the ability to work calmly under pressure in a busy service environment. A team player who can lead by example in the kitchen.
You will be working 38 ordinary hours per week, rostered across 5 days per week (Monday to Sunday), including evenings, weekends and public holidays as required.
Duties and Responsibilities
- Planning menus, including seasonal dishes, and estimating food and labour costs
- Preparing and cooking traditional Japanese dishes, including handmade soba noodles made in-house
- Ordering and managing stock, and liaising with suppliers
- Monitoring the quality of dishes at all stages of preparation and presentation
- Demonstrating techniques and advising other kitchen staff on cooking procedures
- Supervising, rostering and training kitchen staff
- Ensuring compliance with food safety,
hygiene and workplace health and safety requirements
- Storing food in temperature-controlled facilities and managing waste
- Working with the Director on menu development and kitchen operations To be successful, applicants must have:
- AQF Associate Degree, Advanced Diploma or Diploma (ANZSCO Skill Level 2)
- At least three years of relevant experience may substitute for the formal qualifications listed above.
- In some instances relevant experience and/or on-the-job training may be required in addition to the formal qualification.
Applicants will also have
- Experience preparing Japanese cuisine;
experience making handmade soba noodles is highly regarded
- Knowledge of food safety and hygiene standards (Food Safety Supervisor certificate an advantage)
- Ability to supervise and train kitchen staff
- Ability to work a rotating roster including evenings, weekends and public holidays

A salary of $78,000 - $81,000 per annum plus superannuation will be offered to the successful candidate.
