The Role
We’re looking for an experienced Sous Chef to support the Head Chef and Senior Sous Chef in leading the day-to-day operation of The Lucky Prawn kitchen.
This is a hands-on leadership role for someone who can keep service moving, maintain high standards and bring the best out of the team around them.
You’ll be involved across kitchen operations, preparation, service, food quality, stock, food safety, team development and cost control, while helping create a positive, organised and productive kitchen workplace.
The role is full-time and rostered across a mix of day, evening and weekend shifts.
What You’ll Be Doing
Your responsibilities will include:
- Supporting the Head Chef and Senior Sous Chef with the day-to-day running of the kitchen
- Leading and supervising the kitchen team during preparation and service
- Coordinating prep and mise en place to ensure the kitchen is ready for trade
- Maintaining high standards of food quality, presentation, portioning and consistency
- Training, coaching and developing junior kitchen staff
- Supporting rostering and day-to‑day staffing requirements where needed
- Managing stock, ordering, deliveries, storage, rotation and labelling
- Liaising with suppliers regarding product quality, availability and pricing
- Monitoring food costs, portion control, wastage and GP performance
- Maintaining food safety, HACCP, hygiene and workplace health and safety standards
- Working closely with the Head Chef and wider venue management team to ensure smooth service
- Responding to guest feedback when required and identifying opportunities to improve the food offering and kitchen operation
- Stepping into additional leadership responsibilities when the Head Chef or Senior Sous Chef is away
About You
We’re looking for someone who:
- Has at least 2 years’ experience as a Sous Chef or in a similar senior kitchen role
- Is confident leading a team in a busy kitchen environment
- Has strong attention to detail and takes pride in maintaining high standards
- Is organised, reliable and calm under pressure
- Understands food cost, stock control, wastage and kitchen profitability
- Has a solid understanding of food safety, HACCP and kitchen compliance requirements
- Communicates well and works collaboratively with both kitchen and front-of-house teams
- Is proactive, self‑motivated and comfortable taking ownership
- Enjoys developing junior team members and contributing to a positive kitchen culture
Experience with Chinese or Asian cuisine would be highly regarded, but the right attitude, leadership skills and kitchen experience are just as important.
