In this dynamic role, you will deliver hands-on training in advanced patisserie skills, with a particular focus on chocolate confectionery, sugar artistry, and sweet showpieces. As a mentor and industry expert, you will guide students through practical sessions in a fully equipped commercial training kitchen, helping them master the craft of sugar modelling, chocolate tempering, cake decorating, and pastry techniques.

About Us
Australian Professional Skills Institute (APSI) is a specialist culinary arts and hospitality training institute (RTO) based in East Perth, Western Australia. APSI delivers nationally recognised qualifications to both domestic and international students, providing high-quality training in commercial cookery and patisserie.
With expanded training facilities, APSI is bringing new opportunities for a passionate patisserie trainer who wants to share their expertise and inspire budding pastry chefs to excel in the industry.
Key responsibilities The ideal candidate must have extensive technical knowledge and practical experience in sugar work, chocolate tempering, chocolate confectionery, cake making and decorating, pastry, and yeast-based bakery products.
Key responsibilities include
- Supervising and mentoring students in pastry, cake making, and advanced decorative techniques in a commercial kitchen setting.
- Planning and preparing cooking provisions, stock control, and menu planning for training sessions.
- Delivering face-to-face culinary training in a group learning environment.
- Coordinating and preparing learning and assessment materials in collaboration with other trainers.
- Building strong relationships with host workplaces and industry partners.
- Managing student progress, assessment records, and administrative documentation in the student management system.
- Conducting workplace visits to monitor and support student chefs in their industry placements.
Skills and Attributes Required
- Proven, current work experience as a pastry/bakery chef in a commercial establishment.
- Strong technical expertise in chocolate work, sugar artistry, and showpiece design.
- Relevant trade qualifications in pastry, bakery, or culinary arts.
- Certificate IV in Training and Assessment (TAE40122 or TAE40116 including the TAELLN411 and TAEASS502/TAEASS512 units)
- Minimum five years’ practical industry experience in a commercial kitchen.
- Previous RTO training experience as a trainer and/or assessor (highly desirable).
- Excellent communication and classroom management skills.
- Strong organizational skills and leadership abilities.
- Ability to engage and build trust with students, colleagues, and industry partners.
- Problem-solving skills and a proactive approach.
- Proficiency in Microsoft Office and student management systems.
- Experience working with international students and a diverse cultural setting.
