Lead the Pastry Section at Joseph's, Lancemore Mansion Hotel Werribee Park

Join our talented kitchen team as a full time Pastry Chef de Partie at Joseph's Restaurant, taking ownership of the dessert and pastry offering in one of Werribee's most distinctive heritage settings.

As part of the Lancemore Hotel Group, you will work alongside an experienced culinary team, bringing creativity and precision to every dessert that leaves the Joseph's pass.

About the role

Working closely with the Executive Chef and Sous Chef, you will run the pastry section in Joseph's day to day and play a key creative role in shaping our dessert menu. You will:
Take ownership of the pastry section and deliver consistently high-quality desserts for Joseph's Restaurant
Work together with the Executive Chef to design and develop desserts for the Joseph's menu
Bring seasonal, produce-driven ideas to each menu change
Prepare petits fours, breads and other pastry elements for restaurant service
Manage pastry ordering, stock rotation and wastage to support food cost targets
Support, train and guide junior members of the kitchen team
Maintain high standards of presentation, hygiene and food safety
Contribute to a positive,



professional and collaborative kitchen culture

About You

You will bring:
Certificate III in Patisserie, Commercial Cookery or equivalent
Previous experience as a Pastry Chef de Partie, Demi Chef or in a similar pastry role
Strong technical skills across plated desserts, chocolate, sugar work, laminated doughs and baking
Experience in a quality à la carte restaurant environment
A creative eye, a strong understanding of seasonal produce and a desire to contribute to menu development
Strong knowledge of food safety, allergen management and kitchen hygiene requirements
Solid organisation, communication and teamwork skills
Flexibility to work across weekdays, weekends and public holidays as required
Current Australian working rights
