About the role

After more than 22 years of owner-led operation, the Rose & Crown Hotel is strengthening its senior F&B; management structure as the owners progressively step back from the day-to-day management of the F&B; operation to concentrate more on business development, major projects and the future growth of the venue.

We are seeking an experienced Senior Food & Beverage Manager for a broad, hands-on operational leadership role across our restaurants, bars, beer gardens, functions and events.

Reporting to our General Manager, who has been with the business for more than 16 years, you will work alongside an established senior management team including our Restaurant Manager, Bar Manager, AVM, Functions/Duty Management team and Executive Chef, within a solid hospitality team of more than 70 staff.

You will take responsibility for the day-to-day F&B; operation, lead and coordinate the management team and progressively take greater ownership as you learn the Rose & Crown, our people and our systems.

The owners remain actively involved in the business, particularly in strategy, development and major projects. We are looking for someone who enjoys working as part of an established management team and can take genuine responsibility for F&B; operations without everything having to flow back to the owners.

With a new Craft Beer & Wine Bar opening soon, continued investment in the venue and further hospitality projects planned, this is an opportunity for an experienced hospitality operator looking for genuine responsibility, variety and career progression.

Key responsibilities

- Day-to-day F&B; operations across multiple restaurant, bar and outdoor areas

- Leading and coordinating the Restaurant Manager, Bar Manager, AVM, Duty Managers and supervisors

- Solid understanding of functions and event delivery

- FOH rostering, labour control and staff deployment

- Daily and weekly operational planning

- Service standards and guest experience

- Ensuring appropriate management coverage across key trading periods

- Monitoring sales, covers, average spend,



labour and other operational KPIs

- Guest complaints and service recovery

- FOH training, development and accountability

- Working with managers on beverage, stock and operational controls

- Forward planning around bookings, events, weather and expected trade

About you

We are looking for someone with:

- Strong experience in a busy pub, hotel, restaurant or multi-outlet hospitality operation

- A practical, visible and hands-on leadership style

- Experience leading managers as well as frontline staff

- Strong restaurant, bar, functions and events knowledge

- Proven rostering, KPI and labour-control experience

- Strong guest-recovery and problem-solving skills

- Confidence making sensible operational decisions

- Good organisational and communication skills

- Strong IT and hospitality systems capability — experience with systems such as SwiftPOS, NowBookIt, Deputy and Restoke would be an advantage

- The ability to plan ahead, follow through and hold people accountable

This is a hands-on hospitality leadership role

We are looking for a manager who enjoys being visible, interacting with staff and guests and being part of the multi venue operation with both full alc service & also offering just as importantly elevated bar service offerings,

The role requires a practical mix of day, evening and weekend management around the venue's key trading periods. Our main trading periods covered, Tuesday-Saturday with occasional sunday coverage as required

At the same time, we are not looking for someone to personally cover every shift. A major part of the role is developing and coordinating the manager team around you so the operation is properly covered and performs consistently, being business savvy in the hospitality industry is a key requirement of all our managers.
