Baker Bleu kicked off in **** as a tiny sourdough spot with a big mission: bake ethical, insanely good bread for Melbourne. Fast-forward 10 years and we've grown into five stores across two states, bringing back real bread and pastry through the craft of long-fermentation sourdough.
We now roll out everything from classic loaves to bagels, pastries, sourdough pizza and stacked sandwiches—plus a growing wholesale range loved by top restaurants in Melbourne and Sydney. We're always evolving, collaborating and pushing the craft forward.
We're on the hunt for an experienced
Head Barista
to lead the coffee team at our Double Bay bakery. Just off the buzzing village strip, our bakery features a purpose-built pastry kitchen and a dedicated coffee section where the magic happens daily.
As Head Barista, you'll take ownership of the coffee operation — leading and developing the barista team, maintaining exceptional coffee standards, managing workflow and ensuring every cup represents the quality Baker Bleu is known for.
This is a great opportunity for an experienced barista ready to step into a leadership position, or an established Head Barista looking for their next challenge.

About You
At Baker Bleu, we're all about people who aren't afraid to roll up their sleeves, lead from the front and grow alongside the business. You'll be passionate about coffee, confident leading a team and committed to delivering consistently high standards.
To get in the mix, you'll need to bring:
Strong barista experience in a high-volume, fast-paced hospitality workplace
Experience leading, training and developing a coffee team
Excellent coffee knowledge, including dial-in, extraction, milk texturing and quality control
Ability to manage coffee workflow and keep service moving during busy periods
A strong focus on coffee quality, consistency and speed of service
Confidence setting expectations and maintaining standards across the team
Strong organisation across coffee stock, ordering, equipment and station setup
A proactive approach to troubleshooting equipment and operational issues
Warm, confident and customer-focused energy
A hands-on leadership style — happy to jump behind the machine and lead from the front
A genuine passion for great coffee, food and hospitality
