About the role

Mercure Townsville is seeking a talented Breakfast Function Chef to join our dynamic culinary team. This is a casual position based in Townsville, Queensland, offering flexibility whilst contributing to the exceptional dining experiences we provide to our guests. In this role, you will be responsible for preparing and executing high-quality breakfast and function menus, ensuring every dish meets our exacting standards and delights our guests.

This position is integral to maintaining Mercure Townsville's reputation for culinary excellence and outstanding hospitality.

Key responsibilities

- Prepare and cook breakfast items including eggs, pancakes, pastries, and other breakfast specialities to order and to the highest quality standards

- Execute function menus for conferences, events, and private dining occasions with creativity and precision

- Maintain strict food safety and hygiene standards, including proper food handling, storage, and preparation techniques

- Manage kitchen station operations during breakfast and function service periods, ensuring timely and consistent food delivery

- Work collaboratively with the broader kitchen team and front-of-house staff to ensure seamless service delivery

- Monitor food costs and minimise waste whilst maintaining portion control and presentation standards

- Prepare ingredients and mise en place at the start of each shift to ensure smooth service operations

- Adapt menus and respond to special dietary requirements and guest requests with professionalism and flexibility

What we're looking for

- Proven experience as a chef or cook, with specific experience in breakfast preparation and/or function catering preferred

- Sound knowledge of food safety standards and practices, with current or willingness to obtain relevant food hygiene certifications

- Strong culinary skills with the ability to work efficiently under pressure during busy service periods





- Excellent organisational and time management abilities to coordinate multiple dishes and orders simultaneously
- A passion for quality and presentation, with attention to detail in every plate that leaves the kitchen

- Robust communication and teamwork skills, with the ability to work collaboratively in a fast-paced environment

- Flexibility and adaptability, with a willingness to work varied shifts including early starts for breakfast service
- A positive attitude and genuine commitment to delivering exceptional guest experiences
