The Mill Hotel, part of Marlow Hotel Group, is seeking a skilled and reliable Chef to join its busy bistro kitchen.

Located in Milperra, The Mill Hotel combines traditional pub dining with a relaxed atmosphere, accommodation and versatile function spaces. The successful candidate will help deliver consistently high-quality meals across bistro service and venue functions.

Key responsibilities

- Prepare, cook and present dishes according to established recipes and presentation standards.
- Work across different kitchen sections during busy lunch and dinner services.
- Check the quality and freshness of ingredients and finished meals.
- Assist with menu planning, daily specials and function menus.
- Maintain consistent portion sizes and minimise food wastage.
- Monitor stock levels and assist with ordering, receiving and stock rotation.
- Ensure meals are prepared and delivered efficiently during high-volume service.
- Maintain a clean, organised and safe kitchen environment.
- Follow all food-safety, hygiene and workplace-safety procedures.




- Assist with the supervision and training of cooks and junior kitchen staff.
- Work closely with the Head Chef and front-of-house team to ensure smooth service.

About you
- Certificate IV in Commercial Cookery, or an equivalent qualification.
- At least two years of relevant experience in a commercial kitchen.
- Previous experience in a busy pub, bistro or high-volume venue.
- Strong food preparation, cooking and presentation skills.
- Good knowledge of food safety and kitchen hygiene.
- Ability to remain organised and productive under pressure.
- Reliable, professional and able to work effectively within a team.
- Availability to work evenings, weekends and public holidays as required.
