Head Chef — New Toby’s Estate Coffee & Cocktail Venue

Full-time | 5 days per week | Includes 1 weekend day | Day & night trade

Toby’s Estate is opening its first hybrid coffee-and-cocktail venue, and we're looking for a Head Chef to lead the kitchen from opening and beyond.

We're keeping the kitchen small, focused and hands-on, with a menu built around shared plates and mezze-style food that works across both our daytime café trade and evening service.

About the role

You'll lead a small kitchen team alongside your Sous Chef and Kitchen Hand, with a robust focus on consistency, preparation and smooth service.

The kitchen will operate across day and night trade, with a structured one-hour handover between the Head Chef and Sous Chef to keep communication and standards tight.

You'll be responsible for:
Leading the kitchen team day to day
Preparing and executing the shared plates / mezze menu
Maintaining food quality and consistency
Kitchen organisation, prep and service




Food safety and hygiene standards
Stock management and kitchen costs
Training and developing the team
Working closely with the Venue Manager and wider leadership team

What we're looking for
Proven experience as a Head Chef or senior kitchen leader
Experience leading a small, high-output kitchen
Background in shared plates, mezze or similar food
Robust food safety and kitchen management practices
Comfortable working across both café-paced day service and evening trade
Organised, hands-on and calm under pressure
Collaborative leadership style and solid communication

Pay: $85,000.00 – $95,000.00 per year
