The successful applicant will undertake skilled meat processing duties including boning, trimming, cutting and portioning meat to required specifications while maintaining high standards of food safety, product quality and workplace safety.
Key responsibilities include:Boning, cutting, trimming and portioning meatPreparing meat cuts to required production and customer specificationsUsing knives, saws and meat processing equipment safely and efficientlyMonitoring meat quality and identifying products that do not meet required specificationsMaintaining portion control and minimising product wastePackaging and labelling meat products as requiredMaintaining high standards of hygiene and sanitationComplying with HACCP,



food safety and quality assurance requirementsFollowing production procedures and workplace safety requirementsMaintaining a clean and secure processing environmentSkills and experienceRecent experience in a commercial butchery, abattoir or meat processing environmentDemonstrated boning, trimming, cutting and portioning skillsStrong knife-handling skillsKnowledge of meat cuts and product specificationsUnderstanding of food safety, hygiene and meat handling requirementsAbility to work effectively as part of a production teamEssential requirementsRelevant trade qualification in butchery/meat processing or equivalent industry experience demonstrating the skills required to perform the roleThe position involves repetitive manual handling, knife work, standing for extended periods and working in a cold processing environment.
Willingness to undertake Q fever vaccination is required.
