Sous Chef Japanese Inspired Kitchen Lead
We're looking for aSous Chefto lead the design and build of a brand‐recent kitchen atAquain Milsons Point.
The role isfull‐timeand will play a leadership position as you open the kitchen in November ****.
Primary Responsibilities
Build and develop a brand‐new kitchen from the ground up
Lead the kitchen team from pre‐opening through opening
Develop menus and create systems for production, ordering and food cost
Maintain HACCP, food safety and quality standards
Manage budgets, food cost and staff rosters
Co‐deliver a standard of cooking that matches Aqua's reputation
Qualifications and Experience
Proven experience as a Sous Chef in a high‐volume kitchen
Experience in a kitchen rebuild or open‐in‐time launch
Strong knowledge of menu development and food cost
Experience in HACCP and food safety compliance




Certificate III in Commercial Cookery or equivalent demonstrated experience
