The Role
We're looking for an experiencedGroup Sommelierto take ownership of the wine program across all three restaurants.
This is very much a floor-first role — we want someone who lives for the guest interaction and the theatre of outstanding service, not someone buried in a back office.
Administrative work is capped at 1–2 days per week; the rest of your time will be spent where it matters most — on the floor, with the team, and with our guests.
Key responsibilities:
Curate and oversee wine lists across Bambini Trust,



La Riviera, and Ruby's
Train and mentor floor staff across all three venues to elevate wine knowledge and service standards
Sell wine on the floor and build genuine relationships with guests
Deliver exceptional, memorable customer interactions night after night
Keep wine lists current, well-balanced, and reflective of each venue's identity
Limited administrative duties (stocktake, ordering, supplier relationships) — 1–2 days per week
About You
Proven experience as a sommelier, ideally with group or multi-venue experience
Deep wine knowledge with the confidence and warmth to share it on the floor
Impeccable presentation and professionalism
A natural at building rapport with guests and leading by example with staff
Genuinely passionate about hospitality, not just wine
