About the role n
Langlands is entering its next chapter.
n
Following an extensive renovation and renewed focus on dinner, we're looking for a Head Chef to lead the restaurant's next evolution.
n
As Head Chef, you'll lead the culinary direction and day-to-day operation of Langlands, working closely with the Director of Food & Beverage to shape seasonal menus, develop a high-performing kitchen team and deliver exceptional dining experiences.
n
We're looking for a chef with strong foundations, a clear point of view and a passion for quality produce, technique and consistency.
n

Key responsibilities n
n
- Lead and evolve the culinary direction of Langlands.
n
- Develop seasonal menus with a strong sense of identity, seasonality and place.
n
- Balance creativity, craftsmanship and commercial performance across menu development and kitchen operations.
n
- Recruit, mentor and develop a high-performing kitchen team while fostering a culture of pride, discipline and continuous improvement.
n
- Manage food costs, labour, purchasing and inventory to achieve operational and financial objectives.
n
- Maintain the highest standards of food quality, presentation, safety and kitchen compliance.
n
- Partner with the Director of Food & Beverage on restaurant strategy, events, marketing initiatives and future development.
n
- Collaborate with the front-of-house leadership team and beverage team to deliver a seamless guest experience.
n
- Support private dining, special events and activations that showcase Langlands.
n
- Continue building Langlands' reputation as one of Melbourne's leading dining destinations.
n
Qualifications About you nn
- An experienced Head Chef or accomplished Sous Chef ready to lead a premium restaurant.
n
- Strong restaurant experience with a passion for produce-led cooking, grill and open-fire techniques.
n
- A chef who values produce, technique, consistency and attention to detail.
n
- A proven ability to lead, mentor and develop high-performing kitchen teams.
n
- Strong commercial acumen, including food cost, labour and inventory management.
n
- Calm, organised and confident leading a busy service.
n
- Ambitious to define your own culinary style within a premium restaurant environment.
n
- An excellent communicator who builds strong relationships across the kitchen, front-of-house and broader hotel team.
