About the opportunity

The Old Fitzroy Hotel is reopening its dining room, and we're building a kitchen team to bring it back to life.

We're looking for Senior Chefs, Chef de Parties and Commis Chefs to join us for this next chapter.

This is an opportunity to join a much-loved Sydney pub with a strong local following, a genuine food culture and something you don't find everywhere — a theatre right upstairs.

Whether you're an experienced chef ready to take ownership of a section, a CDP looking for your next challenge, or a Commis Chef wanting to develop your skills in a quality kitchen, we'd love to hear from you.

What you'll be doing

Depending on your experience and position, you'll be involved in:

- Preparing and delivering quality food across a busy service
- Taking ownership of your section and maintaining high standards
- Working closely with the Head Chef and wider kitchen team
- Supporting preparation, service and daily kitchen operations
- Maintaining consistency, quality and presentation
- Contributing to menu development and the ongoing evolution of the dining room
- Maintaining high standards of kitchen hygiene, organisation and food safety
- Supporting and developing less experienced members of the team
- Working efficiently and calmly during busy services
- Being part of the reopening and helping establish a strong kitchen culture from the ground up

About you

We're looking for chefs who:





- Have experience in a professional kitchen, with the level of responsibility depending on the role
- Take pride in quality food and consistent execution
- Are organised, reliable and comfortable working in a busy service
- Have a strong work ethic and positive attitude
- Enjoy being part of a team and are happy to get stuck in
- Care about the details while understanding the importance of pace and service
- Want to continue learning, developing and improving
- Are passionate about hospitality and valuable food

For Senior Chefs and CDPs , we're particularly interested in people who are confident running a section, can lead by example and are comfortable taking responsibility during service.

For Commis Chefs , we're looking for enthusiasm, reliability and a genuine willingness to learn.
