Bambini Group is behind some of Sydney's most loved dining destinations —Bambini Trust , a true institution in the Sydney CBD, andLa Riviera , nestled in the legal precinct on Phillip Street. We're expanding, and this November we're opening our third venue,Ruby's , in Double Bay (opening begining of November 2026).

The Role n

We're looking for an experiencedGroup Sommelier to take ownership of the wine program across all three restaurants. This is very much a floor-first role — we want someone who lives for the guest interaction and the theatre of great service, not someone buried in a back office. Administrative work is capped at 1–2 days per week; the rest of your time will be spent where it matters most — on the floor, with the team, and with our guests.

Key responsibilities:

- Curate and oversee wine lists across Bambini Trust, La Riviera,



and Ruby's
n
- Train and mentor floor staff across all three venues to elevate wine knowledge and service standards
n
- Sell wine on the floor and build genuine relationships with guests
n
- Deliver exceptional, memorable customer interactions night after night
n
- Keep wine lists current, well-balanced, and reflective of each venue's identity
n
- Limited administrative duties (stocktake, ordering, supplier relationships) — 1–2 days per week
n

About You nn
- Proven experience as a sommelier, ideally with group or multi-venue experience
n
- Deep wine knowledge with the confidence and warmth to share it on the floor
n
- Impeccable presentation and professionalism
n
- A natural at building rapport with guests and leading by example with staff
n
- Genuinely passionate about hospitality, not just wine
n
